Hey there party people! Hope your weekend was filled with tasty eats and crazy adventures.400x84_g3We got up the crack of dawn…or more accurately, I cursed Philip as he woke me up the crack of dawn and headed out to Moraine Lake to watch the sun rise, which was freakin’ beautiful by the way! Almost made me forget that I was up an ungodly hour with only one cup of coffee in my system. We stuck around until the place was flooded with a wave of tourists (holy hell that place is popular!) and headed into Banff for some brekky, which I’m not ashamed to say included cookies. It didn’t seem right to go to one of the bakery’s there and NOT get one of my favorite cookies, what am I some kind of lunatic?  Although I did so happen to stumble across a knock off of the recipe online, so if they turn out, expect them to make an appearance sometime soon. d6c_0981For the record, I’m not that old, but god damn does my body not respond well to lack of sleep anymore, it’s like anything less than 7 hours and my body’s all “Mayday  mayday! We’re sinking! Abandon ship!” When we were walking up to the lake I don’t think I’ve ever looked at a set of stairs with so much resentment in all my life. It’s not like we did anything super strenuous either, but by the time we got home, my only desire was to sprawl out on the couch like a walrus, watch a movie and stuff something yummy down my gullet. Oh and what a yummy thing is was.d6c_0982You know what’s awesome? Bowls. You know what’s even awesomer? Freaking burrito bowls. Yeah, that’s right, like OHMYGODITTASTESOGOODANDYOUDONTHAVETOWRAPANYTHING awesome. Plus there’s sauce, and who doesn’t like sauce? Weirdos, that’s who and you’re not a weirdo are you? Ok maybe you’re a little weird but you’re not THAT kind of weird. Now I know what you’re thinking, how can you too have this amazing burrito bowl in your life. Well step one is to be super lazy like me, but not so lazy that you can’t be arsed to get off the couch and make a pot of rice. Now stir some stuff in that rice, because stuff is good. Now open some cans, preferably consisting of refried beans and maybe some pintos, or if you ‘re one of those energetic type people, make your own refried beans. Same goes for the guac, I opened a container but you can open some avocados if you’d like. Now for some fresh veggies, because veggies are good for you and you should eat them, as it turns out you’re mom new what she was talking about after all. I chopped up some tomato, green pepper and lettuce but you can use whatever you think would be good. Now put it all in a bowl. Congratulations, you’ve made yourself a tasty bowl.

So you might be wondering, how come you keep going on about bowls when you’ve got yours on a plate? Well, my bowls are a little deep and I wanted you all to see the good things that were going on in this thing. Geeze, the sacrifices I make for you people. Oh, I almost forgot the sauce! That my friends, that right there is what takes this from just Burrito Bowl to TASTY BURRITO BOWL FTW! Creamy, spicy, tangy sauce that’s made up of nothing more than sour cream, lime juice and chipotles (yep, still on the chipotle bandwagon), you can’t have a burrito bowl without a little spicy kick. Now take your bowl over to the couch, shift into walrus mode and turn on a good flick. We finally watched World War Z, which honestly wasn’t as bad as I had heard it was supposed to be, but I’m also not one of those people whose read the book. It wasn’t the greatest movie in the world, but it wasn’t horrible either, but anyhoo, on to the recipe!

Lunch Lady Tips

  • Pack everything up together but leave out the lettuce unless you plan on eating it shortly, otherwise it may start to wilt.
  • Bring along some tortillas or crackers to add some crunch.

    These flavourful zesty burrito bowls are filling and insanely easy to throw together. Tasty cilantro salsa rice, all your favourite burrito fillings, with a creamy chipotle sauce to add a kick!

    • Cilantro Salsa Rice (recipe follows)
    • 1 1/3 cup refried beans
    • 1 1/3 cup pinto or black beans
    • Romaine lettuce, sliced
    • 2 Roma tomatoes, diced
    • 1/2 green pepper, diced
    • 1 – 2 green onions, sliced
    • store bought or homemade guacamole
    • Cream Chipotle Sauce (recipe follows)
    • Tortillas


    • 3/4 cup brown rice
    • 1 1/2 cups vegetable broth or water
    • 2 tablespoons cilantro, chopped
    • 2 tablespoons lime juice
    • 1/2 cup salsa


    • 1/4 cup vegan sour cream
    • 1 tablespoon adobo sauce
    • 1/2 chipotle in adobo sauce, deseeded (unless you like it spicy) and minced
    • 1 tablespoon lime juice
    • Pinch garlic powder
    • Salt and pepper


    1. For the rice, combine the broth or water and the rice in a medium pot over high heat. Bring to a boil, cover and turn down to simmer. Simmer until al the water is absorbed, about 45 minutes. Remove from heat and stir in lime juice, cilantro and salsa.
    2. For the sauce, in a small bowl whisk together all the ingredients. Set aside.
    3. Between 4 bowls, layer all the bowl ingredients and drizzle with the sauce.
    4. If desired, serve with tortillas.

    Burrito bowls = yum! Yours looks so much better than the options we have here – bookmarking this!

    And yes, I no longer do well on less than 7 hours sleep whereas when I was a bit younger I was fine! Now I really love my sleep.

    I love bowls and especially burrito bowls! I am not a huge fan of tortilla wrappers. I still haven’t quite figured out why… but that is why I like the bowl style. This looks sooo good! And I hear ya about the sleep thing. I need 8 hours AND coffee! I am also not a morning person which makes me sad because I want to catch the sun rise.

    This looks fantastic, I’m definitely going to try your recipe. The bowl craze has been around for so long but I still haven’t made one yet. This looks like such a perfect meal for spring weather.

    That looks so good! I love burritos, and I love bowls. Gotta put the two together; why haven’t I done it yet?!
    I hear you on the sleep. Oh my goodness. I’m not old either, but I need a whole lot of sleep. I honestly need like 10 hours (more is preferred, I could seriously sleep through the afternoon on weekends). So you can imagine most days I am not a happy camper!

    I love bowls, I could eat them every day forever if I had to. Sauces make everything awesome!
    I’m a total nanna, these days if I don’t get my precious 8 hours of sleep I am ridiculous, I can just scrape by on 7 on the odd occasion, anything less and by mid-morning I am delirious and needing a nap. 😉

    I’m useless without 8 hours of sleep too. If I don’t get the required amount, even if I go without a nap the next day, I never feel quite awake. It’s almost as if that day is just a loss.

    Your burrito bowl looks like my perfect meal with the avocado, refried beans, and creamy sauce. I really like that cool plate too!
