Hey Dudes! You know what today is? It’s Monday July 1st, which means it’s Canada Day! Which means most of you are enjoying BBQs of epic proportions, sunshine and good times with friends. Then there are the rest of us suckers who are working (boo!) and will enjoy epic BBQ goodness when we get home from work (yay!). Thanks to yesterday’s brunch antics, my day is made just a little bit better because I get to eat portable breakfast noms, and eating tasty food no matter where you are just makes things better.
I never really got why people love avocados so much, I mean, I didn’t hate them or anything, but those weird squishy dinosaur eggs were never at the top of my “must put in mouf now!” list. Then you damn vegans got to me and now I can’t get enough of the things! I don’t know if my taste buds did a 180 or something but what I used to think had no flavor now looks at me with its creamy butteriness and demands that I put it on every sandwich. So when I woke up Sunday morning and decided to make a breakfast sandwich I knew what needed to be done.
I mashed up some avocado with mayo, garlic and onion, then mixed in some Coconut Bacon, because duh! Coconut Bacon is awesome! Top that with some roasted red pepper, yup, ya gotta roast them, those suckers have way more flava. Then to make things a little more breakfasty, I whip out my breakfast weapon of choice, the Fried Tofu Egg Pattie and then some arugula, cause, ya know, you gotta have some greens thrown in there somewhere, and viola! You’ve got yourself a quick and easy breakfast sandwich! Well, quick if you’ve already made the coconut bacon, but we’ll just assume that you’re on top of that mmkay? It’s a little messy, a little salty, a touch sweet and totally hit the spot. I kind of forgot how much I loved breakfast sandwiches, they’re so filling and versatile.

TOFU RED PEPPER BREAKFAST SANDWICH WITH AVOCADO BACON SPREAD
- One recipe of Fried Tofu Egg Patties
- Avocado Bacon Spread (recipe below)
- 1 red pepper, roasted and cut into strips or storebought, rinsed and patted dry
- 4 buns (ciabatta, English muffin, whole grain, etc.)
- 1/2 cup ripe avocado, mashed
- 1/3 cup vegan mayo (regular or reduced-fat)
- 2 cloves garlic, minced
- 1 tablespoon red onion, minced
- 1/2 cup Coconut Bacon
- Salt and pepper, to taste
