For everyone else who has yet to pick up a copy, here’s a couple more reasons to get thee to a bookstore.
These Tempeh Arugula Caesar Wraps were delicious! Don’t be fooled by my slightly burnt tempeh strips, even with the extra bit of charred flavor, we gobbled these up. A creamy cashew-based Caesar-style dressing coats the arugula/romaine and is wrapped up with fried tempeh, red onion and roasted red pepper. If it wasn’t for the crazy bad breath these leave you with (seriously, not meant for consuming if you plan on being in the general range of another human being afterwards), I would eat these for lunch everyday. So much flavor packed into one little wrap.
The Protein-Happy Quinoa Wraps take a tad more planning then some of the other recipes I’ve made, since you want to give the tapenade some time to let the flavors meld. Once that part is done, these come together in a snap, you combine fluffy quinoa, filling cannellini beans, crunchy pepitas and juicy raisins in an acidic and flavorful dressing. This is all placed on top of a layer of tapenade which is made of such boldly flavorful things as sun-dried tomatoes, kalamata olives and capers. As a hater of all things quinoa, P thought these were just ok, but for the rest of us (i.e. me) they were something to look forward to come lunchtime. I see myself making these again (and again) in the near future for a healthy, filling and tasty meal.
My last meal I’ve made (so far) from Vegan Sandwiches were the Chickpea Shawarmas. I soon as I saw this recipe, I knew I was going to make it, I adore the flavor combinations in shawarmas, but it’s been eons since I’ve had one. To make the chickpeas, you mix a marinade and bake them until the liquid is mostly absorbed, mine took a nice bit longer in the oven before the marinade had decreased and thickened but it was well worth the little bit of extra waiting. I’ve never had such flavorful chickpeas before! The marinade turned into a creamy coating and was just superb. The chickpeas then go into a pita, along with lettuce, tomato, parsley and a creamy lemony tahini dressing. So. Freakin’. Good! With all the delectably intense flavors combined in one wrap, I would say that these are probably my favorite recipe I’ve made so far. With only seven recipes down, I can’t wait to see what other amazing sandwiches await me 🙂
