Ok, so I’m starting to turn into a bit of a banana hoarder, they seem to be jumping out at me at every turn. In the fridge, in the freezer, in the cupboard. So what’s a girl to do with all these bananas? I can only drink so many smoothies and as for just eating them as is, I have to admit, I’m not a big fan. So of course, I have to make banana bread, duh! (does anyone even say duh anymore? I’m pretty sure they don’t, but whatever, I’m bringing it back). So what better banana bread to make then the Lower Fat Banana Bread from Veganomicon.
I love making muffins and loaves since they’re so easy to whip up. This loaf is simplicity at its best, all you have to do is mash the bananas, mix in the liquid ingredients, fold in your dry ingredients, put the batter in the pan, lick the hell out of that bowl (don’t look at me like that, you know you want to) and then pop it in the oven, 45 to 50 minutes later (mine took 55 minutes to bake) you get a slightly dense, moist, lightly sweetened loaf. For a lower fat loaf I was surprised at how tasty this stuff was, even P (the hubby) commented on how good it was. Most of the low fat/no fat baked goods I have tried, tend to be gummy or rubbery and hence kind of gross, but there was no problem at all with this recipe, it was just moist enough.
I don’t know why I’ve waited so long to make this recipe as I’ve heard nothing but good things about it. I’ve tried a lot of different banana breads but I think I’ve got a new favourite. If you happen to have a whole-hell-of-a-lotta bananas lying around, then I really think you should make this recipe, trust me, don’t ask questions, just do it!
